So, sauvage means that the use wild or indigeneous yeasts instead of the commercially purchased yeast in this wine.  This is the probably the fifth sparkling by Gruet that I have had, and I think this is my second favorite (the other reviews aren't here because of that crappy hosting company I had whose database server crashed).  Anyway, this wine is great but with a gamey feel to it. The bubbles are constant and initially they are very small.  The taste is crisp and there is nice acidity.  You do get lemon and green apples in the mouth.
